1 February 2016: White fish tend to have milder flavors so I like to kick them up a notch. This recipe showcases haddock with an orange and sweet chile sauce glaze, and it comes together in minutes. Add a side salad and cooked quinoa and dinner is served! Best, Donna:
Donna’s Grilled Haddock a la Orange
Ingredients:
1 pound haddock fillet
Salt and pepper to taste
1/2 cup Sweet Chili sauce
1 orange, with 1/3 cut off and remaining 2/3 sliced into 8 thin slices
2 Tablespoons fresh parsley, chopped
Method:
Preheat grill to 400 degrees F. Form a tray for the fish out of foil and spray with cooking oil. Add the fish. Squeeze the 1/3 size orange piece on top of fish and season with salt and pepper. Place on grill and cook for 10 minutes. Top with Sweet Chili sauce and decoratively layer orange slices on top. Grill for 5 more minutes or until fish is cooked through. Sprinkle with parsley and serve immediately.
Serves 2.
