Donna's Spiced Pomegranate Jelly

14 February 2016:  Instead of giving chocolates on Valentine's Day, I made an alternative sweet treat with this pomegranate jelly.  Please choose between the cinnamon sticks or the star anise (my favorite) for spices.  The jelly was so very simple and utterly flavorful I fell in love with how quickly it can be made and how equally fast it can be enjoyed!  XOX, Donna:


Donna's Spiced Pomegranate Jelly
 Ingredients:
4 cups 100% pomegranate juice
1/4 cup lemon or key lime juice
One 1.75 ounce box powdered pectin (I use No Sugar Needed type) 
6 whole cinnamon sticks or star anise
5 cups white cane or raw (turbinado) sugar

Method:
Whisk together juices and pectin in large pot; bring to full boil that cannot be stirred down.  Add sugar and bring to full, rolling boil for 2 minutes.  Place in 8 ounce canning jars and process according to canning instructions provided with pectin.

Makes 6 eight ounce jars.
