Donna’s Chicken Hash Casserole

10 February 2016:  This is an example of food recycling!  With so much leftover curried vegetable hash, I mixed it with chicken, quinoa and 2 different sauces while topping with cheese.  The result was a filling meal in one casserole that I would definitely make again!  Best, Donna:


Donna’s Chicken Hash Casserole

Ingredients:
4 cups Donna’s Roasted Sweet Curried Vegetable Hash (see 6 February 2016 blog posting for recipe)
3 cups chicken, cooked and shredded
1-1/2 cups quinoa, cooked
2 cups Alfredo sauce
1 cup Herdez (or other brand) Salsa Verde
1-1/2 cups Mexican blend cheese, shredded
1/2 cup Parmesan cheese, grated

Method:
Preheat oven to 375 degrees F.  Spray an 8 x 11 inch baking pan with cooking oil.  Mix together all ingredients but cheeses into large bowl.  Spoon into prepared pan and top with cheeses.  Bake for 45 minutes until casserole is hot, bubbly and cheeses form golden crust.  Serve immediately.

Serves 6.
