Donna's Italian Gnocchi and Turkey Meatball Soup

9 January 2016:  If you are looking for a hearty, heart-healthy and delicious winter soup, look no further than this recipe.  If you have the turkey meatballs made ahead and frozen, the soup can be prepared in less than 30 minutes, another plus!  Ciao, Donna:





Donna's Italian Gnocchi and Turkey Meatball Soup
Ingredients:
2 Tablespoons olive oil
1 sweet onion, chopped
1 cup carrots, chopped
2 quarts (64 ounces) low sodium chicken broth
1 cup white Port wine
2 pounds Donna's Grilled Turkey Meatballs, using all ground turkey in recipe (see 19 October 2014 blog posting)
One 10 ounce package frozen chopped spinach, thawed
1-1/2 teaspoon dill weed, dried
1 teaspoon garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
Two 12 ounce packages DeLallo Gluten-Free Gnocchi 
Parmesan cheese, grated

Method:
Sauté onion and carrots in olive oil placed in bottom of tall soup pot.  Add remaining ingredients and bring to boil.  Cook for another 3 - 5 minutes or until gnocchi is cooked through.  Serve immediately topped with Parmesan cheese, if desired.

Serves 6.
