Donna’s Italian Chopped Salad and Omelet

13 February 2016:  This delightful and refreshing salad is so versatile - it is delicious on its own and as a healthy filling for an omelet!  The Chopped Salad dressing is a zesty accent to the salad; however, if you are in a hurry or don't want to make the dressing, a good Italian dressing would also work well.  Best, Donna:



Donna’s Italian Chopped Salad
 Ingredients:

For Salad:
1 head butter lettuce, washed and finely shredded
1 cucumber, peeled, seeded and finely chopped
1 large heirloom tomato, finely chopped
1 red onion, finely chopped
1/2 cup Kalamata olives, chopped
4 ounces Feta cheese, finely chopped

For Dressing:
1/4 cup red wine vinegar
1 Tablespoon lemon juice
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
2 teaspoons garlic, minced
3/4 teaspoon salt
1/2 teaspoon pepper
2 teaspoons sugar
1/3 cup olive oil

Method:
Chop all salad ingredients and store in separate containers until ready to serve.  Mix together all dressing ingredients in order given and mix well.  Allow each diner to place the amount of chopped salad ingredients and dressing they prefer in a large bowl, add dressing and toss well.  Place each serving on individual plates and serve immediately.

Serves 4.

Donna's Italian Chopped Salad Omelet
 Ingredients:
1½ teaspoons butter
2 eggs, beaten
Salt and pepper to taste

Method:
Melt butter in omelet pan over medium high heat.  Sauté onion and cucumber in butter.  Mix eggs, salt and pepper, and add to pan.  Add remaining ingredients in amounts desired, fold in half and cook through.  Top with lettuce and drizzle with Italian or Chopped Salad dressing.

Serves 1.
