Gluten Free “What’s in the Fridge “ Pizza
Ingredients:
2
gluten-free tortillas
One
cup figs and apricot mixture from Mediterranean Salad recipe
One
bacon burger, crumbled
1
cup grilled vegetables, chopped
12
cherry tomatoes, cut in half
2
tablespoons basil leaves, chopped
1/4
cup blue cheese crumbles
1/4
cup Parmesan cheese, grated
Freshly
ground pepper
Olive
oil
Method:
Preheat
oven to 400° F. Place tortillas on cookie sheet Sprayed with cooking oil.
Arrange ingredients on tortillas in order given, finishing with a drizzle
of olive oil on top of each pizza. Bake for 15 minutes. Remove from oven
and let cool slightly about two to three minutes before slicing into pieces.
