Donna’s Shrimp & Langostino Scampi with Pesto Pasta

24 August 2016:  Dear Readers, this colorful dish turned out to be one of our very favorites!  It has everything:  Carbs, protein, vegetables and great flavor.  Once the pasta is cooked, it literally only takes 10 minutes to prepare the delicious sauce, and this recipe can be a meal all on its own.  A side salad would make a nice addition, if desired.  Enjoy!  Best, Donna:


Donna’s Shrimp & Langostino Scampi with Pesto Pasta
Ingredients:
1 pound gluten free angel hair or spaghetti pasta, cooked
1/4 cup pesto sauce
1 Tablespoon reserved pasta liquid
1/2 cup unsalted butter
1 Tablespoon garlic, minced
2 Tablespoons Sauvignon Blanc wine
1 teaspoon lemon juice
1/4 teaspoon Sriracha sauce
24 multi-colored grape tomatoes, chopped
1/4 pound langostino
1/2 pound shrimp (21/25), cooked, tails removed
Salt and pepper to taste
2 Tablespoons Parmesan cheese, grated
Basil leaves
Lemon slices

Method:
Mix together cooked pasta, reserved pasta liquid and pesto sauce and set aside.

In large saute pan, heat butter at medium high heat until melted.  Add garlic, wine, lemon juice, Sriracha and tomatoes.  Cook about 5 minutes.  Add langostino, shrimp and salt and pepper, cooking only until cooked through, about 5 more minutes.  Serve immediately on top of pasta and sprinkle with cheese.  Add basil and lemon before serving, if desired.

Serves 2 - 3.
