Donna's Slow Cooked Gluten Free Turkey Meat Loaf
Ingredients:
2-1/2 pounds ground turkey
1 sweet onion, finely chopped
¾ cup yellow cornmeal
1/3 cup fresh medium salsa
1/3 cup catsup (2 teaspoons + remaining for top of meatloaf)
2 large eggs
2 Tablespoons Worcestershire sauce
1 teaspoon thyme leaves, dried
1 teaspoon salt
½ teaspoon pepper
Method:
Place all ingredients (using only 2 teaspoons catsup for
meat loaf) in large bowl and gently mix until just combined. Spray slow
cooker with cooking oil, spoon meat loaf mixture into cooker, smooth top of
loaf, and spread remaining catsup on top. Cook on Low setting for about
10 hours or High setting for about 7 hours.
Serves 6 – 8.
